  • - 2 medium cooked chicken breasts shredded or chopped (using rotisserie chicken is a time-saver)
  • - 2 ripe avocados pitted and diced
  • - 1/2 cup of sweetness with fresh corn roasted, canned, or frozen
  • - 1/4 cup of minced red onion for a bit of crunch and zing
  • - 2 tablespoons of fresh cilantro feel free to use parsley or dill if you prefer
  • - 2 tablespoons of zesty lime juice for that citrus kick
  • - 2 tablespoons of high-quality extra-virgin olive oil
  • - Salt and pepper to taste
  • - Additional: 1/4 teaspoon of garlic powder for savory depth and a handful of cherry tomatoes halved, for a pop of color and sweetness.
