  • 6 –8 fresh basil leaves keep 4 whole and slice the remainder into ribbons
  • 1/2 tsp crushed red pepper flakes

Step 1: Prepare the Chicken

  • Begin by preheating your oven to 375°F (190°C). Pat the chicken breasts dry with paper towels, ensuring they’re not too wet for the skillet. This step allows for perfect browning.
  • In a bowl, season the chicken breasts with kosher salt, freshly ground black pepper, and garlic powder. Give them a good rub, ensuring the seasoning gets into every nook and cranny. This part is crucial; it's where flavor begins.

Step 2: Sear the Chicken

  • In a large skillet, heat a generous drizzle of extra-virgin olive oil over medium-high heat. Once hot, add the seasoned chicken breasts. Searing creates a delicious crust, locking in moisture. Cook each side for about 4-5 minutes or until golden brown.

Step 3: Add Pesto and Mozzarella

  • Once the chicken is seared, spread a dollop of basil pesto over each breast. Then, place the slices of fresh mozzarella on top. Don’t be shy with it; more is more! Transfer the skillet to your preheated oven. Bake for 15 to 20 minutes or until the chicken is cooked through (165°F or 74°C).
