  • 100 g slivered almonds
  • 5 green onions thinly sliced on the diagonal

  • 2 tbsp all-purpose soy sauce light, not dark soy sauce
  • 4 tbsp plain white vinegar standard variety
  • 2 tsp toasted sesame oil brown, not untoasted yellow
  • 2 tbsp granulated sugar white or brown
  • 1 tsp grated fresh ginger
  • 1 tbsp sesame seeds

Instructions
 

  • Begin by washing and chopping the Chinese cabbage. Aim for thin strips to create a perfect base. Place it in a large mixing bowl and set aside while you prepare the dressing.
  • In a separate bowl, combine 5 tablespoons of extra virgin olive oil, 2 tablespoons of soy sauce, and 4 tablespoons of white vinegar. Add the sesame oil, sugar, and grated ginger. Whisk these together until well mixed. You’re looking for a slightly thicker consistency with a smooth texture.
  • Once the dressing is ready, it's time to add the crispy noodles and slivered almonds to the bowl with cabbage. Gently toss them together. You want the noodles to be evenly distributed and coated in the dressing.
  • Slice the green onions diagonally and sprinkle them over the salad. Finish with a generous sprinkle of sesame seeds. These final touches not only look great but also enhance the flavors.
