Equipment

  • Instant Pot

Ingredients

  • 2 cups steel-cut oats do not substitute with rolled or instant oats
  • 3 cups filtered water
  • 1 cup unsweetened almond milk or plain water
  • ½ teaspoon fine sea salt
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 1 tablespoon pure maple syrup optional; adjust sweetness to taste
  • 1 teaspoon vanilla extract
  • Toppings of choice: fresh berries toasted nuts, chia seeds or flaxseeds, a drizzle of maple syrup or honey, splash of milk

Instructions

Step 1: Gather Your Ingredients

  • Begin by gathering all the ingredients on your countertop. This keeps the process organized. Check that you have steel-cut oats and standard measuring cups.

Step 2: Measure and Mix

  • In the Instant Pot, combine 2 cups of steel-cut oats with 3 cups of filtered water and 1 cup of almond milk. If you prefer, you can substitute the almond milk with plain water. Don’t forget to add half a teaspoon of fine sea salt. This ingredient enhances the overall flavor, making your oatmeal taste even better!

Step 3: Spice It Up

  • Next, sprinkle in the ground cinnamon and nutmeg. These spices provide warmth and sweetness without adding sugar. Stir everything gently to mix it together.

Step 4: Set the Instant Pot

  • Now close the lid on your Instant Pot and ensure the valve is set to sealing. Choose the pressure cook setting and adjust the time to 10 minutes. While that seems quick, the time you save is tremendous.

Step 5: Natural Release

  • Once the cooking cycle is complete, allow the pot to release pressure naturally. This usually takes about 10-15 minutes. It’s during this time that the oats continue to absorb liquid, enhancing the flavor and texture.

Step 6: Stir and Sweeten

  • After the pressure has released, carefully open the lid. Give the oatmeal a good stir. At this point, you can adjust sweetness by adding maple syrup or any sweetener of your choice. Don’t forget the vanilla extract! Stir it in well for an additional punch of flavor.

Step 7: Serve and Enjoy

  • Now it’s time to serve your oatmeal. You’ll probably want to scoop a portion into a bowl and add your favorite toppings—fresh berries, nuts, or a splash of milk. Dig in and enjoy that comforting bowl of oats!

Notes

  • Don’t skip the soaking: If you prefer, soaking the steel-cut oats overnight can reduce cooking time and make them even creamier.
  • Adjust cooking time: If you like your oats thicker, reduce the water slightly. If you enjoy them creamier, add a bit more.
  • Experiment with spices: Feel free to mix in spices like cardamom or ginger for a unique flavor.
  • Storing leftovers: Place leftovers in an airtight container in the fridge. They can last for up to a week.
  • Reheating: When reheating, add a splash of water or milk to help with the consistency.
