Ingredients
  

  • 1 pound Argentine red shrimp - shells removed deveined, and tails detached
  • ¼ cup full-fat canned coconut milk - use the creamy portion
  • 2 tablespoons avocado oil
  • ½ teaspoon garlic granules
  • ¼ teaspoon smoked paprika
  • ¼ teaspoon freshly ground black pepper
  • ½ teaspoon sea salt
  • 1 ½ tablespoons freshly squeezed lemon juice - roughly from ½ lemon
  • 1 ½ tablespoons chopped fresh parsley
  • 1 teaspoon finely chopped fresh ginger
  • 1 tablespoon coconut aminos

Instructions
 

  • Start with the star of the show — your shrimp. Make sure they are completely defrosted. Rinse under cold water, then gently pat them dry with a paper towel. Dry shrimp sauté better and get that lovely golden crust you crave.
  • In a mixing bowl, combine the coconut milk, lemon juice, coconut aminos, garlic granules, smoked paprika, black pepper, sea salt, and ginger. Whisk until well blended. Now, add the shrimp into the bowl and toss to coat them thoroughly in this flavorful marinade. Allow it to sit for about 15-20 minutes. This step lets the shrimp absorb all those amazing flavors.
  • In a large skillet, heat the avocado oil over medium-high heat. Make sure the oil is hot enough; this step is crucial for achieving that sear on the shrimp.
  • Once the oil is sizzling, carefully add the marinated shrimp to the pan. Sauté them for about 2-3 minutes on each side, until they are pink and opaque. Overcooking can lead to rubbery shrimp, so keep an eye on them!
  • Once cooked, remove the skillet from heat. Stir in the chopped fresh parsley for a bright finish. A burst of fresh herbs always elevates a dish.
  • Now it’s showtime! Present the shrimp on a plate or in a bowl. Drizzle any leftover sauce from the skillet over the top. Pair it with your sides of choice, and prepare for the applause.
