Ingredients
  

  • Extra-virgin olive oil
  • Freshly chopped parsley
  • Brined feta cheese preferably in block form, but crumbled will also suffice
  • 1 bag of fire-roasted bell pepper and onion medley
  • 1/2 bag of charred corn kernels
  • Pre-marinated carne asada strips
  • 1 tablespoon of lime juice
  • 1 teaspoon of smoked paprika
  • Rice or warm tortillas for serving
  • Hot sauce or a dollop of sour cream for topping

Instructions
 

  • Gather all your ingredients on the counter. It's always easier to see everything laid out. That’s half the battle won right there. Make sure the carne asada is thawed completely if it was frozen.
  • Get your grill going. Aim for medium-high heat. Once it’s hot, it’s showtime. The sizzle of the meat will make anyone's mouth water.
  • Place the carne asada strips on the grill. Cook for about 3-4 minutes on each side, or until you reach your desired level of doneness. I recommend aiming for medium to keep that tenderness intact. Don’t forget to squeeze some lime juice over the meat for that zesty kick!
  • Toss the fire-roasted bell pepper and onion medley on the grill. Cook for about 5 minutes, or until they’re nice and caramelized. This adds a delightful sweetness that contrasts perfectly with the savory beef.
  • While the carne asada and veggies are grilling, prepare your rice or warm the tortillas. If you are going with rice, a sprinkle of lime zest will take it to another level.
  • Slice the carne asada against the grain for tender, easy-to-eat strips. Plate everything up with the grilled veggies, rice or tortillas, and add a sprinkle of crumbled feta cheese and chopped parsley for a colorful presentation.

Notes

  • Choose the Right Cut: Look for flank or skirt steak. These cuts are flavorful and tender when cooked correctly.
  • Don’t Overcook: Keep an eye on the meat. Overcooking will make it chewy. Trust the timing!
  • Marinate Longer: If you have time, marinating for an extra hour or overnight enhances flavor.
  • Use a Meat Thermometer: Aim for a medium-rare internal temperature of around 130°F to 135°F for the perfect bite.
  • Let It Rest: After cooking, allow the meat to rest for about 5 minutes before slicing. This ensures the juices don’t run out, keeping it juicy.
