Equipment

  • Medium-sized skillet
  • Spatula

Ingredients

  • 1 package of Trader Joe’s frozen cauliflower gnocchi
  • 2 Tbsp. extra-virgin olive oil or avocado oil
  • 1/4 cup roasted garlic and herb marinara sauce
  • Freshly grated Pecorino Romano or Parmesan cheese
  • 1 Tbsp. fresh basil chopped
  • A pinch of crushed red pepper flakes

Instructions

  • Start by removing the gnocchi from the package. You don’t need to thaw it; it can go straight from the freezer to the pan.
  • In a medium-sized skillet, heat one tablespoon of olive oil over medium heat. You want to ensure the oil is hot enough for a nice sear but not so hot that it smokes.
  • Add two minced garlic cloves to the pan, stirring for about a minute until fragrant. Avoid burning the garlic—it can turn bitter and ruin the flavor.
  • Carefully add the frozen gnocchi to the skillet. Use a spatula to gently toss the gnocchi in oil and garlic. Allow them to fry for about 5-7 minutes, turning occasionally until they get golden brown and slightly crispy on the outside.
  • With the gnocchi almost done, toss in a handful of spinach (or kale if you prefer). Cook until it wilts, which will take just a couple of minutes.
  • Season the mixture with salt and pepper to your liking. If you want more flavor, add in some grated Parmesan cheese, fresh basil, or any other herbs you fancy.
  • Transfer your beautiful creation to a plate. You can top it with a sprinkle of more cheese or some cherry tomatoes for a burst of color and flavor.

Notes

  • Don’t Overcrowd the Pan: This ensures the gnocchi gets crispy. If you're making a large batch, use two pans.
  • Experiment with Sauces: This recipe pairs well with alfredo, pesto, or even a simple marinara.
  • Add Protein: For heartier meals, throw in some cooked chicken, shrimp, or even chickpeas.
  • Make it Vegan: Skip the cheese and opt for nutritional yeast for a cheesy flavor.
  • Save Time: Prep garlic and veggies ahead of time to make cooking a breeze.
