Start by removing the gnocchi from the package. You don’t need to thaw it; it can go straight from the freezer to the pan.
In a medium-sized skillet, heat one tablespoon of olive oil over medium heat. You want to ensure the oil is hot enough for a nice sear but not so hot that it smokes.
Add two minced garlic cloves to the pan, stirring for about a minute until fragrant. Avoid burning the garlic—it can turn bitter and ruin the flavor.
Carefully add the frozen gnocchi to the skillet. Use a spatula to gently toss the gnocchi in oil and garlic. Allow them to fry for about 5-7 minutes, turning occasionally until they get golden brown and slightly crispy on the outside.
With the gnocchi almost done, toss in a handful of spinach (or kale if you prefer). Cook until it wilts, which will take just a couple of minutes.
Season the mixture with salt and pepper to your liking. If you want more flavor, add in some grated Parmesan cheese, fresh basil, or any other herbs you fancy.
Transfer your beautiful creation to a plate. You can top it with a sprinkle of more cheese or some cherry tomatoes for a burst of color and flavor.
