Ingredients
  

  • 1 lb ground chicken
  • 2 green onions finely chopped
  • 1/4 cup diced red bell pepper
  • 2 tablespoons fresh cilantro chopped
  • 2 teaspoons minced garlic
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon crushed red pepper flakes
  • Juice from 1/2 lime
  • 4 slices pepper jack cheese
  • 4 toasted burger buns
  • 1 ripe avocado
  • Garlic salt to taste
  • Juice from 1/2 lime
  • 1 tablespoon sour cream optional, for creaminess
  • 1/4 teaspoon smoked paprika optional, for added depth

Instructions
 

  • Gather all your ingredients. It may sound trivial, but having everything in order can speed up your cooking. I measure and chop everything ahead of time. It sets a nice pace for grilling.
  • In a large bowl, combine the ground chicken, green onions, diced red bell pepper, cilantro, minced garlic, kosher salt, crushed red pepper flakes, and lime juice. Use your hands to mix everything until evenly combined. I find using hands gives a better texture to the patties. Just make sure to wash your hands before and after!
  • Divide the mixture into four equal portions. Shape each portion into a patty, about ¾ inches thick. If you prefer a thinner burger, go for it! Just remember that thinner burgers can dry out faster.
  • Preheat your grill over medium heat. Once it's hot, place the patties on the grill. Cooking each side for about 5-6 minutes ensures that they reach an internal temperature of 165°F. You can also achieve quality grilling with a stovetop grill pan or under a broiler.
  • In the last minute of cooking, place a slice of pepper jack cheese on each patty. Close the grill lid so the cheese melts beautifully. My mouth waters every time I slice into a perfectly melted patty!
  • Once cooked, place the patties on toasted burger buns. Add a generous dollop of your lazy girl’s guacamole. And there you go! An irresistible chicken lime burger is ready to be devoured.

Notes

  • Keep your hands wet: Moisten your hands before shaping the patties to prevent the mixture from sticking.
  • Use an instant-read thermometer: It’s the best way to ensure the chicken is fully cooked without drying it out.
  • Customize your toppings: Feel free to add more toppings like lettuce, tomato, or jalapeños for extra flavor.
  • Don’t rush the resting: Let the burgers rest for a couple of minutes before serving. It retains the juices perfectly.
  • Prep ahead: You can make patties ahead of time and freeze them. Just cook them once you're ready to eat.
