Gather all your ingredients. It may sound trivial, but having everything in order can speed up your cooking. I measure and chop everything ahead of time. It sets a nice pace for grilling.
In a large bowl, combine the ground chicken, green onions, diced red bell pepper, cilantro, minced garlic, kosher salt, crushed red pepper flakes, and lime juice. Use your hands to mix everything until evenly combined. I find using hands gives a better texture to the patties. Just make sure to wash your hands before and after!
Divide the mixture into four equal portions. Shape each portion into a patty, about ¾ inches thick. If you prefer a thinner burger, go for it! Just remember that thinner burgers can dry out faster.
Preheat your grill over medium heat. Once it's hot, place the patties on the grill. Cooking each side for about 5-6 minutes ensures that they reach an internal temperature of 165°F. You can also achieve quality grilling with a stovetop grill pan or under a broiler.
In the last minute of cooking, place a slice of pepper jack cheese on each patty. Close the grill lid so the cheese melts beautifully. My mouth waters every time I slice into a perfectly melted patty!
Once cooked, place the patties on toasted burger buns. Add a generous dollop of your lazy girl’s guacamole. And there you go! An irresistible chicken lime burger is ready to be devoured.
