  • 2 tablespoons all-purpose flour
  • 3 tablespoons freshly squeezed lemon juice
  • 1 tablespoon Dijon mustard
  • 1 teaspoon dried thyme
  • 3 tablespoons capers drained
  • Freshly grated Parmesan cheese for serving
  • Finely chopped fresh parsley for garnish

  • Nothing sets you up for success like having everything in place. Measure out your ingredients and have your kitchen tools handy.
  • In a large skillet over medium heat, warm the extra virgin olive oil. Watch it shimmer; that’s the signal it’s ready for action.
  • Carefully add the Trader Joe’s chicken meatballs to the skillet. Sear them for about 5 minutes, turning occasionally so they brown evenly.
  • Once the meatballs are golden brown, add the unsalted butter. Let it melt and mix with the oil, creating a flavorful base for your sauce.
  • Add the minced garlic. Sauté just until it becomes fragrant. Be cautious not to burn it—garlic can turn bitter quickly!
  • Sprinkle in the flour and whisk it into the butter and garlic mixture. This will give your sauce a nice texture. Gradually add in the chicken stock, whisking as you go. The mix should start to thicken.
  • Once your sauce thickens slightly, stir in the lemon juice, Dijon mustard, and dried thyme. Add those capers for an extra punch of flavor.
  • Return the meatballs to the skillet and gently coat them with the sauce. Let them simmer for about 10-15 minutes until heated through.
