Ingredients
  

  • 1 bag of Trader Joe's frozen Roasted Potatoes featuring Peppers and Onions
  • 1 package of Trader Joe's Spicy Italian Chicken Sausage cut into thin slices
  • Olive oil or butter for frying the eggs
  • Trader Joe's Hatch Valley Salsa to taste
  • 2 ounces of Trader Joe's Authentic Greek Feta in Brine crumbled
  • Fresh cilantro leaves for garnish optional
  • 1/4 teaspoon smoked paprika
  • 1/4 cup diced bell peppers

Instructions
 

  • Begin by heating a non-stick skillet over medium heat. Add the sliced chicken sausage. Cook for 5-7 minutes until browned. Stir occasionally to ensure even cooking. The aroma will start to drift around the kitchen.
  • In the same pan, add the bag of frozen roasted potatoes featuring peppers and onions. They don’t need much persuasion. Allow them to fry while the sausage finishes cooking. Stir them in to mix the flavors, about 8-10 minutes should do.
  • Push the sausage and potatoes to one side of the skillet. On the empty side, add a drizzle of olive oil or a bit of butter. Crack your desired number of eggs into the pan. Cook them sunny-side-up or scramble them—whatever suits your taste.
  • Once the eggs are cooked through, sprinkle smoked paprika over them for a bit of flair. Assemble the plate by layering the sausage and potatoes and topping with the perfectly cooked eggs.
  • Top it all off with crumbled feta cheese and a dollop of Hatch Valley Salsa. If you’re feeling fancy, add fresh cilantro for a pop of color and freshness.

  • Cook in Batches: If making this for a crowd, consider cooking the sausage and potatoes in separate batches.
  • Don’t Overcook the Eggs: For the best results, keep an eye on the eggs to ensure they remain sunny-side-up.
