Elaine Gordon
It’s a beautiful Saturday afternoon, and I’m gathering friends for a backyard barbecue. The smell of grilled meats wafts through the air, mingling with the chatter and laughter.

Equipment

  • small bowl

Ingredients

  • 1/2 cup fresh Trader Joe's cilantro packed
  • 1/4 cup fresh Trader Joe's parsley packed
  • 1 tablespoon Trader Joe's red wine vinegar
  • 5 cracks of Trader Joe's South African Smoke Seasoning Seasonal
  • 1 teaspoon Trader Joe's dried oregano
  • 3 cloves of Trader Joe's premium peeled garlic
  • 5 tablespoons Spanish organic extra virgin olive oil EVOO, divided
  • 1/2 teaspoon cumin optional, for an earthy warmth
  • 1 tablespoon fresh lemon juice optional, for brightness

Instructions

  • First, line up your ingredients. Fresh herbs and the right oils can make all the difference. Look for quality olive oil and fresh herbs; they’re crucial for flavor.
  • Start by giving your cilantro and parsley a rough chop. You don’t need to mince them, but smaller pieces will help release their flavors.
  • Next, grab your garlic. If you love that robust flavor, chop it finely. Some folks enjoy it minced for a firmer bite, while others prefer smashing it with the back of a knife for a smoother taste. Do what pleases your palate!
  • In a small bowl, combine the chopped cilantro, parsley, and garlic. Add the red wine vinegar, seasoning, dried oregano, cumin (if using), and a healthy pinch of salt and pepper.
  • Now, here comes the fun part. Gradually pour in the olive oil while whisking the mixture. This emulsifies everything, creating the perfect texture and blend for the chimichurri. If you want an extra kick, add lemon juice at this stage.
  • Let the sauce rest for at least 30 minutes. This waiting time allows flavors to meld beautifully. Now, you can slather this sauce on just about anything your heart desires.

Notes

  • Use fresh herbs: Dried herbs won’t give you the same vibrancy; fresh is the way to go.
  • Adjust the acidity: Want it tangier? A splash more vinegar or lemon juice does the trick.
  • Consistency matters: If the sauce is too thick, add more olive oil until you reach the desired consistency.
  • Experiment with spices: You can add red pepper flakes for heat or swap in different herbs. The options are endless!
  • Craft a larger batch: Make a double batch and store some for later. You’ll thank yourself when the craving hits.
