  • ¼ teaspoon smoked paprika for a deeper flavor

  • First things first, round up your ingredients. You’ll want to make sure you have everything needed, even if you decide to modify some components. The full list allows you to mimic that Trader Joe’s experience right at home.
  • If you’re using fresh corn, start by husking 4 medium ears of sweet corn. You want to ensure it's sweet and juicy. Boil them for about 5-7 minutes, cool, and then cut the kernels off the cob. If you’re using canned corn, rinse it thoroughly to remove excess salt.
  • Next up, finely dice your yellow onion and red bell pepper. Dice them small enough to blend well into the salsa. For the jalapeño, start with one teaspoon of finely chopped pepper. If you like things spicy, add more according to taste.
  • In a large bowl, combine the corn, diced onion, bell pepper, and jalapeño. Then, add your vinegar, sugar, mustard seeds, ground coriander, cumin, crushed red pepper flakes, sea salt, lime juice, and smoked paprika. Give it a good stir to combine everything nicely.
