  • First, gather all your ingredients. In a large bowl, mix the olive oil, harissa paste, minced garlic, smoked paprika, ground cumin, salt, black pepper, and ground coriander if using. Stir everything together until well-blended.
  • Next, add the chicken chunks to the bowl. Toss the chicken until each piece is thoroughly coated in the marinade. For maximum flavor, cover the bowl and let the chicken marinate for at least 30 minutes. If you have more time, letting it sit in the fridge for a few hours or overnight works wonders.
  • Now, preheat your oven to 400°F (200°C). It’s essential to get the temperature right so the chicken cooks evenly and develops a lovely crust.
  • Once the chicken has marinated, spread the chunks out on a baking sheet lined with parchment paper. Ensure they’re in a single layer. This allows for even cooking and browning.
  • Slide the baking sheet into the preheated oven. Bake the chicken for 25 to 30 minutes, or until the internal temperature reaches 165°F (75°C). If you want a nice char, you can broil the chicken for the last 2-3 minutes.
  • When the chicken is ready, remove it from the oven. Let it rest for a few minutes. This allows the juices to redistribute. For serving, place the chicken on a platter, garnish with fresh mint, and serve lime wedges on the side.
