Ingredients
  

  • 16 oz Trader Joe's harvest grain blend prepared with vegetable broth or water
  • 2 cups cubed butternut squash
  • 1 tbsp extra virgin olive oil
  • 1 medium apple chopped
  • 1/3 cup dried tart cherries
  • 1/3 cup lightly toasted pecans
  • 2 cups baby spinach or kale optional
  • Salt and freshly ground black pepper to taste
  • 3 tbsp fresh orange juice
  • 2 tbsp pure maple syrup
  • 1 tbsp Dijon-style mustard
  • 2 tbsp red or white wine vinegar
  • 1/4 tsp garlic powder
  • 1/4 cup extra virgin olive oil
  • Optional Topping:
  • 1/4 cup crumbled feta cheese
  • 1/4 cup roasted sunflower seeds
  • Chopped fresh parsley

Instructions
 

  • First, prepare the Trader Joe's Harvest Grain Blend according to the package instructions. Typically, it involves boiling it in vegetable broth or water. This step elevates the flavor significantly. Once done, fluff it with a fork and set it aside to cool.
  • Preheat your oven to 400°F (200°C). Toss the butternut squash cubes in a bowl with the olive oil, salt, and pepper. Spread them evenly on a baking sheet. Roast for about 20-25 minutes, or until golden and tender. They should be caramelized, bringing out their natural sweetness.
  • While the squash is roasting, chop the apple and prepare your spinach or kale. You want everything ready for an easy assembly.
  • In a small bowl, whisk together the orange juice, maple syrup, mustard, vinegar, garlic powder, and olive oil. Drizzle a bit of salt and pepper for seasoning. Taste it; you want it bright and zesty.
  • In a large mixing bowl, add your cooled grain blend, roasted squash, chopped apple, cherries, and pecans. If you chose to go with spinach or kale, toss that in as well. Pour the dressing over and gently mix everything together.
  • Now, it’s time to serve it up! If you wish, add feta cheese, sunflower seeds, and parsley on top. You can enjoy it warm or chilled.

  • Choose Fresh: Fresh butternut squash will give you the best flavor. Check your local farmers' market for quality produce.
  • Make It Bold: Add more herbs like cilantro or dill for an aromatic explosion.
