Ingredients
  

  • 1 package of TJ’s Pollo Asado prepared per the instructions, then diced
  • 1 cup finely diced white onion from TJ’s
  • 1/2 cup finely chopped cilantro from TJ’s
  • 1/2 cup chopped TJ’s bell peppers
  • 1/4 cup sliced black olives
  • 1 bag of TJ’s shredded mozzarella cheese
  • 1 container of your favorite salsa from TJ’s
  • 12-16 small tortillas from TJ’s

Instructions
 

  • Take the Trader Joe’s Pollo Asado out of the package. You can choose to grill, bake, or sauté it based on your mood. Grill it for a smoky flavor or bake it for simplicity. If grilling, preheat your grill to a medium-high temperature. Make sure to oil the grill grates.
  • Place the chicken on the grill for around 5-7 minutes per side or until the internal temperature reads 165°F. If you're using an oven, preheat it to 425°F and bake for about 25-30 minutes. Sautéing on medium heat in a large skillet takes about 10-12 minutes.
  • Once cooked, remove the chicken from heat and let it rest for about 5 minutes. This helps retain the juices.
  • After resting, finely dice the chicken into bite-sized pieces. The flavors are concentrated, and the pieces should be tender.
  • Now it's time to assemble. Take a tortilla, layer some diced pollo asado, add a sprinkle of cheese, a handful of diced onions, olives, cilantro, and maybe even a spoonful of salsa. Roll it up or serve it open-faced. Whatever works for you.

Notes

  • Marinate Longer – If time allows, let the chicken marinate for a few hours. This extra time enhances the flavor profile.
  • Use Fresh Ingredients – Fresh cilantro, tomatoes, and even lime make a world of difference in taste.
  • Mix and Match Toppings – Feel free to get creative. Add or swap toppings based on family preferences. Think avocado or fresh radishes.
  • Check the Temp – Keep a meat thermometer on hand. Ensuring the chicken reaches a safe internal temperature is crucial.
  • Serve it Family-Style – Lay everything out and let guests assemble their own tortillas. Adds an interactive element to your gathering.
