Trader Joe's Pumpkin Ravioli Recipe

As autumn rolls in, so does the season for hearty meals that warm the soul. One of my favorite finds at Trader Joe's is their pumpkin ravioli.

Ingredients
  

  • 2 packages Trader Joe’s Pumpkin Stuffed Ravioli
  • 3 oz Crumbled Goat Cheese
  • 1 teaspoon Fresh Rosemary finely minced
  • ¼ cup Walnuts coarsely chopped
  • 1 tablespoon Fresh Sage finely chopped
  • 6 tablespoons Butter with Sea Salt
  • 2 tablespoons Crushed Gingersnap Cookies
  • 1 tablespoon Toasted Pine Nuts

Instructions
 

  • Bring a large pot of salted water to a boil. Gently add the pumpkin ravioli to the boiling water. Cook until they float to the top, approximately 4-5 minutes. This shows they are ready to be scooped out.
  • While the ravioli is cooking, melt the butter in a large skillet over medium heat. As it begins to bubble, add the minced rosemary and sage. Sauté for about a minute, allowing the herbs to infuse the butter with flavor.
  • When the ravioli are cooked, use a slotted spoon to transfer them directly to the skillet. Gently toss them in the herb butter, allowing the sauce to coat each ravioli.
  • Sprinkle in the crumbled goat cheese, chopped walnuts, and crushed gingersnap cookies. Give it a gentle stir, ensuring that the cheese begins to soften and cling to the pasta.
  • Transfer the coated ravioli to plates. Top each serving with a sprinkle of toasted pine nuts and a pinch of flaky sea salt. For an added pop of sweetness, drizzle honey over the top if desired.

Notes

  • Tip 1: For a creamier texture, you can mix in a touch of heavy cream into the butter sauce.
  • Tip 2: Feel free to experiment with different cheeses. Ricotta or feta could also be excellent alternatives.
  • Tip 3: If walnuts aren’t your thing, pecans or almonds can provide a similar crunch.
  • Tip 4: To add color and nutrition, throw in some steamed spinach or sautéed mushrooms.
  • Tip 5: Leftovers can be reheated with a splash of broth to bring back moisture.
