Whole Dungeness Crab Recipe

Elaine Gordon
Before I launch into the wonders of whole Dungeness crab, let’s talk pairings. This seafood delight shines brightest alongside fresh and zesty flavors. Think about a citrusy salad. A crisp green salad with arugula and a sprinkle of goat cheese complements the richness of crab meat perfectly.

Equipment

  • Saucepan

Ingredients

  • ½ teaspoon smoked paprika
  • Juice of 1 fresh lemon
  • 1 –2 teaspoons zesty horseradish sauce
  • Fresh chopped parsley for garnish
  • 2 cloves garlic finely minced
  • ½ cup classic tomato ketchup
  • 1 tablespoon coarse sea salt
  • 4 whole steamed Dungeness crabs approximately 2 pounds each
  • 16 tablespoons 1 cup or 2 sticks salted creamery butter
  • 1 teaspoon Old Bay-style seafood seasoning
  • Slices of lemon and lime for serving

Instructions

Step 1: Prepare the Crab

  • Begin by cleaning your Dungeness crabs. Use gloves to prevent any pinching (they're not just for show!). Rinse them under cold water to remove any debris.

Step 2: Steam the Crab

  • In a large pot with a steaming basket, bring water to a boil. Place the crabs inside, cover, and steam for about 15-20 minutes. They’re done when they turn a bright orange. The aroma is almost too much to handle!

Step 3: Make the Dipping Sauce

  • In a separate saucepan, melt the butter over medium heat. To it, add minced garlic and sauté until golden. Take it off the heat and mix in lemon juice, paprika, horseradish, and Old Bay seasoning. This sauce is what dreams are made of.

Step 4: Serve the Crab

  • Arrange the crabs on a large platter. Pour the melted butter sauce over them. Garnish with fresh parsley and lemon slices. Voila! You have a stunning feast ready to go.

Step 5: Enjoy!

  • Gather your friends and family, and enjoy cracking into the crabs together. Pair with a side salad or some crispy bread.

Notes

Here are a few tips for a successful crab feast:
  • Fresh Is Best: Always opt for live crabs if possible. They have the best flavor.
  • Timing is Key: Don’t over-steam your crab. Watch carefully and remove once they’re bright orange.
  • Serving Style: Serving them hot enhances the flavor. You can keep the crabs warm in an oven on the lowest setting if need be.
  • Sauce Variations: Feel free to mix up the butter sauce. Try adding different herbs or spices according to your taste.
  • Don't Forget Napkins: Things can get messy—trust me on this one! Have plenty of napkins on hand for everyone.
